So while on my Whole30 journey, I made the most comforting batch of chili I’ve ever eaten! So I wanted to share the recipe with you all!
What you’ll need:
1 lb of ground turkey (or beef if you prefer)
2 cans diced tomato (make sure to read labels if you’re on whole30)
1 can tomato sauce
1 large carrot, chopped
1/2 onion, chopped
3 tbs chili powder
1 tbs thyme
A sprinkle of red pepper chili flakes
1/2 tbs garlic, minced
* Feel free to add any additional veggies, I’m just a simple gal! I’ve done potatoes, zucchinis, and peppers!*
I start by cooking my ground turkey in a skillet while simultaneously chopping my veggies up! I’ve found if you just add the ground turkey and cook it in the chili, it’s not as clumpy and feels like you’re eating meat puree (yuck).
After turkey is cooked, set aside and pour your tomato sauce, diced tomatoes, veggies, and spices (chili powder, thyme, red chili flakes, garlic, also salt and pepper to taste) in the pot and stir it all up. I like to do this so everything is covered in spices and sauce!
Add the turkey…easy peasy.
Turn on the heat to about 7 or high medium and stir everything together. Let the pot sit until you start to hear bubbling…then turn the heat down to 5 or medium.
Let pot cook for around 30 mins
TIP: I’ve also found that adding cauliflower rice underneath the bowl of chili is SO GOOD! This batch lasts me about 5 days of lunch so it’s a money saver too(: Let me know your thoughts on it & how it goes!
